Slow roast pork from the Boriken Taino, especially popular for the holidays in the Puerto Rican mountains. For 1 pork shoulder: 1 garlic clove, 1 peppercorn, ¼ TSP oregano, 1 TSP kosher salt, 1 TSP olive oil, ½ TSP white vinegar.
