Food trucks and lunch wagons are not new. Around 1900 hoodoo wagons (sometimes called voodoo wagons) appeared. They sold sandwiches and snacks from a horse-drawn wagon.
Well, you could go back to the cattle drives in the 1800s, and remember the cook who traveled with the boys and had a wagon for his supplies. I bet we could go back even further, if we thought about it.
I saw photos of cowboy dining and you are right. I love the name hoodoo wagon and your comment merits a post about cowboys.
