Owensboro west to Paducah: mutton, Worcestershire-based sauce
Monroe county style, including bordering counties. Both grandmothers from this area: pork shoulder thinly sliced. Dip of vinegar, lard, butter, cayenne & black pepper, salt.
Purchase area: pulled or chipped on toast with chopped onions.
General: hickory smoked everywhere. Burgoo from Louisville west—but that’s another story
